New record for the balsamic vinegar IGP has been established: in 2017 97.5 million liters were sold. This is the great news that was showed during the “Rapporto Qualivita Ismea 2017” presented in Rome In the presence of the Minister of Agricultural, Food and Forestry Policies Maurizio Martina. In the 2017 Report it is interesting to observe the comparison of the last decade, in which the number of Denominations has grown by 40% in absolute terms and by 70% in value. We have also an increase of 143% of Fly Exports on a ten-year basis and speaking of exports, one can not but make direct reference to what is the most exported product of the Made in Italy agro-food industry, the Balsamic Vinegar of Modena PGI , which holds a record for the 92% of the production directed cross-border, about half towards non-EU countries. In total, in fact, only 97.5 million liters were calculated in 2017 , or a + 3% compared to 2016 and a + 5% compared to 2015. The consumer value was about 970 million euro and like all other values has undergone an increase compared to the previous year. Positive dynamics therefore for the precious condiment, mainly due to the fact that they are manifested in a period in which the economic conjuncture is anything but positive.

A new type of vinegar quality controlThis new record for the balsamic vinegar IGP is important also in terms of product knowledge, it was certainly the important baggage of initiatives organized by the Consortium to bring the consumer closer to the culture of this typical excellence of the territory. Starting from the USA project started in April with a duration of three years up to 2020 which involves culinary institutions, chefs, bloggers, journalists and influencers from overseas in events and activities to be carried out on the web and in particular on social networks.

A new type of vinegar quality control is going to be mandatory: the Modenese black gold should guarantee 100% all stages of production, starting from genetic texts on the raw materials supplied. Are you curious to find out more? Keep on reading!

The proposal of the Ministry of Agricultural, Food and Forestry Policies for the modification of the production disciplinary of the protected geographical indication Balsamic Vinegar of Modena has been published in the Official Gazette. If there is no opposition within 30 days, the process moves to Brussels which should formalize the green light for genetic tests on raw materials.

The director of the Balsamic Vinegar Protection Consortium of Modena, IGP Federico Desimoni expressed satisfaction for this very important first step that introduces a substantial change in the control system. They would like to introduce a system of verification of raw materials – grape must and wine vinegar – through the isotopes, already used in the wine system.

A new type of vinegar quality controlThis is the genetic verification of the genuineness of what has been conferred by hundreds and hundreds of companies to our consortium members, who are about fifty, a control downstream that will no longer be limited to the documentary tool but will guarantee 100% companies and the consumer. They are the forerunners in the world of vinegars.

In the meantime, the Balsamic Vinegar of Modena IGP  has grown by 1% in 2017, exceeding 95 million liters for a consumer value that exceeds 900 million euro. This represents a good result for the modenese black gold, which is considered again as one of the most important and precious product made in Italy. Indeed, the balsamic vinegar is known for its excellence worldwide, making it one of the most appreciated Italian products sold abroad. Moreover, as we read in this article, a new type of vinegar quality control will be held soon to guarantee a major control of what we consume.

Barattini explains why he chose those three words. Project because the traditional balsamic vinegar of Modena can not be realized except with some design over time, and, considering the number of years necessary to produce this product, can not be defined otherwise than a Precious fruit of the commitment and dedication of those who produce it. He is the owner of a acetaia and he revails us his secrets: the acetaia started in the early twentieth century with his grandfather’s bottles but the oldest woods date back to 250, 300 years ago.

Rossi Barattini produces balsamic vinegar in the country estate in Via Giardini Sud. Nestled in the green, the producer does not only handle family vinegar barrels, but also several hectares of land cultivated mainly with blackberry and grape plants. “Twelve years ago, I left my job in the industrial sector,” he remembers, “and I began to make the farmer: balsamic vinegar is part of a country work.”

The grapes grown in the estate produce the must, then cooked and acetic acid, from which the PDO (Protected Designation of Origin) and PGI (Protected Geographical Indication) are obtained. While, from the combination of fruit plants and vinegar, delicious balsamic fruit compositions are produced, such as pear, plum and balsamic strawberries.

In addition to selling balsamic vinegar to retail they also make guided tours in the acetaia. Visitors come from all over the world, but especially from South America, the Far East and North Europe. As we can see, Paolo Rossi Barattini is the example of the tradition that is transmitted year by year.

At the time of the Romans, it was a very important food resource, used in addition to the economic field, even in the military and even in the medical field. The LUISS University organized a workshop based on the Made in Italy, taught by the Director of the ABM Federico Desimoni. The Director of the Consortium ABM has been involved as a History Case of excellence in the protection of Made in Italy and the country’s economy, stigmatizing in particular the need of building a global identity based on drivers of authenticity, origin, taste, protection and warranty.

“Made in Italy is a difficult concept to be protected, communicated and promoted- states Federico Desimoni- and for this reason it is necessary to outline a more precise identity: through Branding in the case of private brands or by identifying Public and collective brands such as PDOs, IGPs and STGs. In the second case, which I am pleased to represent in this context, the communication factor is of primary importance, which is also the basis of another fundamental asset or the protection of an identity increasingly “stolen” by attempts of counterfeiting, evocation and imitation. The role of the Consortiums of Defense is to fight such crimes, to monitor compliance with administrative procedures, to take legal action where necessary and to promote EU procedures. That said, there is still a lot to be done – concluded the Director of the ABM Consortium – in particular on product knowledge, different types and uses, on nutrition and health characteristics and on market transparency, as well as transmitting to the consumer reliability and confidence.

balsamic vinegar originalSo it is more than just an academic lesson at the LUISS University, it is a comparison of the state of the work on promotion and protection of Made in Italy agri-food, organized in two sessions: the first, moderated by the Food Law Coordinator Daniela Corona, is dedicated to international scenarios; the second one was moderated by the Master of Food Law Ercole De Vito and devoted to direct testimonies.

The Balsamic Vinegar original project: Blancdenoir won the contest.
Blancdenoir, a recent establishment in Desenzano with international skills and a particular vocation of food & wine, was awarded by the Consorzio Tutela Aceto Balsamico di Modena for the selection of a body for the implementation of the program “Balsamic Vinegar of Modena, The Original Protected Geographical Indication from Europe” of the initially estimated value excluding VAT, of EUR 968,000. The purpose of the competition was to entrust a communications campaign in the United States, to be carried out from the start of the contract until the end of 2019.

The successful tenderer, Blancdenoir will have to implement and manage seven areas of activity, identifying the best strategic and innovative solutions, structured in: Definition of communication strategy; definition of the visual identity of the campaign; press office and public relations activities; management of online and off-line communication campaigns;  Event / Activity Organization; Monitoring and evaluation; Financial management of the project.

Balsamic vinegar originalThe Consorzio Tutela Balsamic Vinegar of Modena has assumed its current form in 2013, although it has been since 2009 that the product has been obtained by the European authorities under the name IGP. The body is the guardian of the discipline and is a privileged interlocutor in all matters relating to the product at the regulatory level. In addition, through dialogue with the institutions, the media and the final consumer, it promotes knowledge and culture regarding the balsamic vinegar of Modena. Today, it has 50 companies in the compartment and represents 98% of the certified annual production of Balsamic Vinegar of Modena IGP. 90% of production is exported: today, the product is marketed in 120 different countries. The production turnover exceeds 300 million euros, the one consuming the 700.

Octopus with balsamic vinegar of Modena is the perfect starter if your aim is to surprise your guests. It is really easy to prepare but at the same time really tasty. It is one of that plates that everyone likes! Read the recipe below!

For four persons, ingredients: 1 medium octopus (about 400 g), 3 red chillies, 5-6 bay leaves, 2 tablespoons of extra virgin olive oil, 1 lemon, 200 ml of Traditional Balsamic Vinegar of Modena, 20g of black pepper grains, chives ,Salt to taste.

Preparation:

Wash and boil the octopus in the saucepan with 2 liters of water, chillies, laurel leaves and pepper for 20 minutes; let it rest 10 minutes off in its broth. Remove the tentacles from the middle of the octopus without spraying them. Lay a mold with the transparent film and place the tentacles for the long; fill any blank spaces with the head of the octopus cut into strips, press well and seal with the film. Place them in the refrigerator for 3 hours. Dilute Balsamic Vinegar of Modena with 1/2 liter of octopus broth and a pinch of salt. Cook on slow fire for about 30 minutes. Extract the suppressed octopus from the fridge, remove the film and slicing it finely. Serve the sliced ​​octopus slices with a few stems of chives; season with olive oil and lemon juice and finish with the balsamic vinegar that you have previously cooled down.

Ingredients:

Place the two risers in semicircle and move the plate by swirling in order to meet. Decorate with asparagus and garnish with a few drops of Traditional Balsamic Vinegar of Modena.
