Balsamic Vinegar original project led by the Consorzio Tutela dell’Aceto IGP is becoming more and more successful thanks to the Internet. Indeed, the web started talking about this brand new project, which focuses its attention on the relationship among the balsamic vinegar of Modena and the USA.
First of all, the project aims not only to the protection of the product itself, but also it aims to add value to its authenticity, safety, traceability and labeling guaranteed by the European trademark protection. Indeed, Italy is known for its big heritage of food products but it is more and more spread the possibility to find counterfeiting products on the market. The original project was seattled in order to defeat, or tries to, this tendency on the international market.
Another important aim of the original project is to reach and join people working in the food industry, such as professional chefs, food enthusiasts and also the acetaie of Modena. Moreover, the Consorzio will focus on three regions of the USA, Florida, California and New York, parts of the USA in which the market of international products is really spread and could be a good point of start for the balsamic vinegar.

On Friday, September 29, at 4:15 – 6:30 PM Expo, there is the Taste of Sacramento & Gift Suite; on Saturday, September 30, at 1:45 – 2:45 PM the Discovery Sessions are programmed and finally at 4:15 – 5:15 PM there is the event called “Live Food & Drink Blogging”: partecipants will experience Balsamic Vinegar of Modena and other nine different food and drink products in small-group encounters over a 50-minute period.
