Fried and baked cardoncelli mushrooms

Ingredients for 4 people:

  • 25 mushrooms
  • 1 liter of sunflower oil
  • 3 tablespoons of Traditional Balsamic Vinegar of Modena
  • 3 tablespoons of delicate white vinegar
  • 1 egg
  • salt to taste

Procedure

Start by washing and cleaning the mushrooms. Once cleaned, fry them at 140 ° C for about 13 minutes. Then place them side by side in a baking tray, so as not to turn them over. Once baked, place them on a sheet of baking paper and leave them in the refrigerator for a whole night. At this point prepare a Balsamic Vinegar glaze and set aside.

Scald the mushrooms in the oven at 180 ° C for a few minutes per side. Then brush with the balsamic vinegar glaze, the egg, the delicate whie vinegar and a pinch of salt. Finally prepare the mayonnaise to serve alongside and serve. This super tasty snack is ready!
