Radicchio Tortelli with original Balsamic Vinegar of Modena

Tradition and quality never get old, do they? Nevertheless, why not combining them with a little something new? Tortelli is a typical Italian pasta and this different condiment we suggest you will give it a special touch, thanks to Balsamic Vinegar of Modena, white beans cream and lard.

Here’s a new recipe to try at home if you would like to surprise your guests with a different still delicious Italian delicacy!

Ingredients (for 4 portions)

For the filling: 3 heads of radicchio, 250 g ricotta, 250 g Parmigiano Reggiano, 1 tablespoon of butter, ½ onion, salt, pepper

For pasta: 500 g flour, 5 eggs

For cream: 200 g white beans , ½ onion , oil, salt , pepper

Execution

Firstly, chop radicchio finely and then toss it in a pan together with onion and butter. After this, add cold ricotta, Parmigiano Reggiano, salt, pepper and stir all the ingredients together.

Secondly, prepare pasta using 500 g of flour and eggs, then amalgamate everything. Roll out the pasta dough, making it rather thin, and realize little square-shaped pieces of 3-4 cm, adding radicchio filling inside them. Eventually, close them.

Later, brown off onion with oil, add white beans and cook for 10 minutes. Blend everything, adjust salt and pepper and sift.

In the end, cook tortelli for more or less 4 minutes and lay them down on the white beans cream. Season them with butter, add small thin cubes of lard and… a fundamental touch of elegance with Balsamic Vinegar of Modena!

Now the last thing you have to do is… enjoy your meal and love the content looks on your guests’ faces!
