Wild Boar fillet with red fruits, potatoes and Traditional Balsamic Vinegar of Modena


Are you in the mood for a fresh and unique wild boar recipe? Here’s L-O’s recipe of wild boar with red fruits, potatoes and Traditional Balsamic Vinegar of Modena. The wild boar taste is very similar to that of the pork but it can come with a touch of gaminess. Keep on reading to discover the perfect recipe!

Ingredients
• 2 wild boar fillets of 400 g each
• 400 g of mixed berries (blackberries, raspberries, blueberries, currants)
• 2 potatoes
• 200 gr of red wine
• butter to taste
• sage
• rosemary
• oil

Procedure

Let’s start by seasoning the wild boar fillet with oil, salt, pepper, sage, rosemary and flavorings. Then cook it under vacuum at 80 ° C for about 40
minutes.

Then prepare the sauce: put the red fruits in a saucepan and cook with the red wine and 200 g of Original Balsamic Vinegar of Modena. Reduce the mixture until a fairly thick sauce is obtained.

At this point peel the potatoes and cut them into thin slices. Blanch the slices and cook them in the oven with oil, salt and pepper for about 15 minutes at 180 ° C.

Once the boar fillet is cooked, open it and place it in a non-stick pan. Then spread the fillet with extra virgin oil, butter, rosemary and sage. Finally place the the boar on a serving platter and garnish with the red fruit sauce and potatoes. Super tasty! Enjoy the meal!
