This is the story about Giuseppe. At one point in his life, he asked himself: “Balsamic Vinegar or Wine Vinegar?”. But first of all, Giuseppe tells us how his passion started. About 40 years ago, he transformed his wine vinegar production into the valuable Modenese Balsamic Vinegar.
When we met him at his mansard, he started telling us why he decided to transform his wine vinegar barrels into a battery of Traditional Balsamic Vinegar.
Giuseppe’s Story
Giuseppe intrigued us. We asked him: “Why have you decided to take this important decision”?
He answered us: “I am from Calabria but I grew up in Modena. Our family’s tradition was to order every year some good wine from the South of Italy. A wine with 14 degrees of alcohol content. I always added some of this wine to my wine vinegar barrels. The vinegar barrels contain 50l and are placed in my wine cellar. I used to produce wine for about 25 years.
Everything started when I gave away the 5l of my vinegar that used to store in vinegar some vegetables to a famous local restaurant. After that episode, the owner of the restaurant asked me more about my wine vinegar. He said that was better than his Balsamic Vinegar and gave me some of it.
I suddenly fell in love with the Balsamic Vinegar! I liked so much its particular taste so I decided to start my battery of Balsamic Vinegar.
In 1989 I bought two more barrels, one with the capacity of 10l and the other 15l. I also changed the use of the barrels that I already owned and started creating my private vinegar. I had to learn the production techniques and I was able to produce a young but satisfied product.
Thanks to the good results and the support of my wife, today I own tens of vinegar barrels in my mansard from a 200-litre oak mother barrel and to scale smaller barrels mainly in chestnut wood, a wood I prefer.
After 40 years of activity, I am very proud of my Traditional Balsamic Vinegar. Recently a group of experts has tasted it and has given to it 69 points to the first battery and 65 points to the second one. I am very satisfied!
To end, my brother and my nephew have decided to follow my passion. They own they Balsamic Vinegar batteries”.
So, Balsamic or wine Vinegar?
In Giuseppe’s opinion, the two kinds of vinegar products are very different. Although my origins are from Calabria, I am a true lover of the Modenese Traditional Balsamic Vinegar.
We tasted his Balsamic Vinegar and we liked it very much!
