Ingredients

2 kg fava beans in pod, 250 g fresh milk, 150 g grated pecorino cheese, 300 g fresh cream, 4 slices cheek lard (5 mm thick), olive oil, salt and pepper, Traditional Balsamic Vinegar of Modena

Execution

First of all, clean fava beans and open the pod in two. Gather all the seeds in a bowl and if fava beans are fresh, it’ll be easy to remove the peel that covers them. Alternatively, immerse them in hot water. In a bowl, season fava beans with olive oil, salt and pepper.

At this stage, cut cheek lard in thin strips and combine them with fava beans.

Fava beans salad with Traditional Balsamic VinegarNow, let’s see how to make pecorino cheese mousse. Combine pecorino cheese with fresh milk and let it rest for 30 minutes more or less. Then, let it boil and mix until you obtain a fondue. Remove the mixture from the heat and let it cool down. Thereafter,  beat cream until stiff and combine it delicately with the cheese fondue.

Eventually, serve on a dish fava beans and cheek lard with two quenelles of cheese in the centre. Add some Parmigiano and, last but not least, season with Traditional Balsamic Vinegar of Modena to make it all more delicious.
