Fennels cream with Traditional Balsamic Vinegar of Modena

If you’re on a detox diet, this recipe is perfect for you. At the same time, we all know how it goes during festivities: you eat a lot, so if you feel a bit guilty and would like to purify your body, or simply to eat something very healthy and tasty, try this one!

Ingredients

3 fennels, 1 medium onion, olive oil, salt, original Traditional Balsamic Vinegar of Modena

Execution

Before you start cooking, make sure you perfectly wash the fennels, removing all traces of soil. Also, remove the external tougher layers.

After this, chop the fennels in slices. Pour olive oil in a steel casserole, add onion and chopped fennels, put a bit of salt and let it brown for some minutes.

At this stage, add boiled water, just enough to cover the fennels and let it cook over medium heat until the vegetables will be quite soft. This will take more or less 15 minutes. Then remove it from the stove and, with the help of a hand blender, reduce everything to a cream consistency. Now it’s time to taste it, in order to see whether the cooking is good or not, and if need be, salt a little bit.
