ACETUM’s Balsamic Vinegar

ACETUM is a world leader in the production of Balsamic Vinegar of Modena PGI and Traditional Balsamic Vinegar of Modena DOP. Its economic performance is extraordinary and its numbers are the clear proof.

In fact, during the reporting period 2017, the company had a turnover of 102 million, producing 25 million liters of Balsamic Vinegar PGI. This constitutes 26.3 percent of the entire Italian national production. The company counts 190 employees working in two production plants with 21 automated bottling lines. The fastest one produces over 24 thousand pieces per hour.

At Acetum, over 15 million liters of Balsamic Vinegar PGI age in vats, barrels and barriques made of precious wood. Additionally there are 5,600 wooden barrels containing Traditional Balsamic Vinegar of Modena DOP. The company, founded in 1991, has invented the famous Balsamic Vinegar glaze, which is appreciated especially overseas, in the United States. Then the company introduced also the concept of the so called qualitative segmentation of the product, capable of creating great production flexibility.

Use Balsamic Vinegar«Before the advent of Balsamic Vinegar glaze, chefs used to thicken Balsamic Vinegar in various ways; the glaze greatly facilitated their work», explains Acetum CEO, Marco Bombarda. «I was 22 when Cesare Mazzetti and I decided to found a company to produce Balsamic Vinegar in Motta di Cavezzo, where my family had bought the former Cantina Sociale (Social Vinegar). The company has grown rapidly thanks to our excellent operational management and thanks to intuitions and innovations on the product».

Finally, in 2015 Acetum closed the deal with the Clessidra investment fund, structuring and consolidating until the transition, in 2017, to the British multinational company Abf. Abf is an élite brand worldwide which has over 130 thousand employees and a turnover exceeding 16 billion. Acetum sells its products in over 90 countries and the export turnover share reaches 70 percent.
