This category is subject to no production rule. The law does not foresee a minimum aging period and allows other ingredients than the raw materials to be used such as colorings, caramel, sweeteners and thickeners. 

Furthermore, the Consortium does not allow the word Aceto (Vinegar) to stand on condiments’ labels. 

Nevertheless, it is among balsamic condiments that you will find the greatest Balsamic excellences of the territory, which are the result of an ancient tradition and of the finest craftsmanship. These products are not only created with cooked grape must and following the the ABTM traditional method of production but also bottled by the producer.
