Greater is the density of Balsamic Vinegar of Modena, so higher is the quality. Usually, a dense Balsamic Vinegar is a superior quality product. Density is a positive characteristic, but it must not be excessive!

How can you calculate the density of the product?

The density is calculated based on the weight of one litre of the product. For example, density is 1.10 if a litre of finished product weighs 1.10 kg or density is 1.20 if a litre of product weighs 1.20 kg.

They sell Traditional Balsamic Vinegar of Modena DOP after ageing from 12 to 25 years in small barrels of different woods. It has a minimum density of 1.34. The composition is only of cooked must.
During the natural and very long ageing process, the density increases. It must not become excessive. It is perfect when it assumes a correct syrupy flow.

Sometimes a high density becomes a negative characteristic.
This phenomenon rarely happens to Traditional Balsamic Vinegar of Modena PDO because cooked must is the only ingredient that can undergo crystallization or sediment abundantly.

An excessive density means that the vinegar is not perfect. Also, the ageing of the Balsamic was not good.

As you can see from the video, sometimes the product takes on an appearance and texture that make it unusable.

The viscosity and smoothness of the product, typical characteristics of an excellent Traditional Balsamic Vinegar of Modena PDO, are not present in this case. There is an excessive presence of sediment on the bottom of the bottle (check the video above).
