Tasters Course of Balsamic Vinegar

The “Consorteria” organizes for the year 2020 the Tasters Course of Balsamic Vinegar. The XXXVI Training Course for Aspiring Students of Traditional Balsamic Vinegar aims to protect the production of Traditional Balsamic Vinegar of Modena. It wants to impart correct information on the characteristics of the centuries-old product and to introduce to the enthusiasts the practice of tasting Traditional Balsamic samples.

The lessons will begin on Monday 10 February 2020 at the headquarters of the Consorteria of Traditional Balsamic Vinegar: Via Roncati 28 in Spilamberto. It will continue on the evenings of Monday and Thursday until Thursday 26 March 2020. In total, ten theoretical lessons and four sample tasting evenings of Traditional Balsamic Vinegar.

Theoretical lessons will focus on these topics:

  • Information and story of the Consortium
  • The wood and the barrels
  • Grapes, grape must and its cooking
  • The start-up and management of the Acetaia
  • Traditional Balsamic Vinegar microbiology
  • Chemical-physical analyzes
  • The fermentation process of the must
  • Traditional Balsamic Vinegar story and actuality
  • Administration of the Acetaia
  • The method of tasting

The program of the Tasters Course of Balsamic Vinegar will be distributed in the first lesson. You will find timetables and variations.

Attendance to the course is compulsory: two absences for reasons of real impediment will be permitted at most, to be declared to the Course Director.

The course will end with the presentation of a “Tesina” prepared by each participant on a topic. The topic could be one of the subjects of the lessons of the course or other arguments. The student will choose it relating to the “Balsamic of Tradition”.

It is important to underline that the course is aimed at those who intend to dedicate themselves to the production of “Balsamic Vinegar” at the family level, in absolute respect for the most rigorous tradition.

Tasters Course of Balsamic Vinegar will end with the release of the “Aspiring Student Taster” Diploma. This certificate will allow you to access the qualifications of “Student Taster”, “Taster” and “Master Taster of Traditional Balsamic Vinegar”.

The requests to participate exceed the number of places available. It will be necessary to proceed with the acceptance of those who have enrolled in the lessons first.
