The Black Gold of Modena: Balsamic Vinegar. The book “The Black Gold of Modena” was presented for the first time last 3rd December 2020. The book has the Consortium for Protection of Balsamic Vinegar of Modena PGI and the Consortium for the Protection of Traditional Balsamic Vinegar of Modena patronage and advice.
Sofia Malagoli and Artioli Editore 1899 edited it, and Chef Massimo Bottura wrote the preface.

The book has 135 pages that contain the millenary history of Balsamic Vinegar of Modena.
The story links to the culture of the territory.
It talks about the traditions handed down from generation to generation, the culinary recipes and the insights into the barrels (real chemical laboratories for the product).
It talks, also, about the woods and related techniques of preparation told by master coopers. The volume has two versions: Italian and English.

The Black Gold of Modena book

You can find in the book the difference between the two types of the product. These two kinds of vinegar are recognized and protected at European level: Traditional Balsamic Vinegar of Modena PDO and Balsamic Vinegar of Modena PGI.

There also different recipes signed by local chefs such as Luca Marchini (he has got a Michelin star to his “Erba del Re”), the master of sandwich Daniele Reponi, Antony Trametta from Mississipi, Hiroaki Tokuyama from Japan and other famous names of the Modena area.

Mariangela Grosoli, President of the Consortium for the Protection of Balsamic Vinegar of Modena PGI, and Enrico Corsini, President of the Consortium for the Protection of Traditional Balsamic Vinegar of Modena PDO, have participated to the presentation of the book.
They have underlined the importance of this work for the promotion of the Modenese territory.

Sofia Malagoli, the project coordinator, illustrated that the goal was to combine the past with the present and tradition with innovation. The objective was to intrigue the reader and conduct him (or her) on a journey to discover the Modenese Balck Gold and its extraordinary culinary versatile that have made it unique food excellence in the world.
