After the Covid-19, a lot of things have changed for the tasting procedures. Our desire to continue to try new experiences is still the same.
The meetings organized for the tastings are always a special occasion. You are sitting around a table with people who share the love for this food excellence. It is also an opportunity to increase your knowledge about it.
The tasting evening does not begin when you sit down at the table. Some precautions for the tasters before starting: have finished eating at least an hour before start the tasting; do not eat foods with flavours such as garlic, onion or candy; no chewing gum; do not smoke; do not drink coffee. You have to avoid all those things that can alter tastes.
Each taster has got a set of 6 glasses contained in a practical case. Once a small amount of Traditional Balsamic is poured, the taster observes the visual aspects and evaluate the olfactory sensations of the product.
This operation used to be by using a “Matraccio” (glass container in the shape of an ampoule). The colour, clarity and density of the product were observed by placing it next to the light of a candle. Similarly, the olfactory evaluation is also performed: frankness, fullness, intensity and persistence, acidity are carefully examined.

During the tasting, you wear the mask between one taste and the next. This fact does not change at all the experience and the tasting itself.
You use a ceramic spoon to taste all the products because ceramic is the only material that does not transfer tastes or flavours the Traditional Balsamic Vinegar.
All tasters fill out a personal evaluation form assigning a score to each aspect of the product. There is also a “table” card obtained by averaging the marks of all the tasters.
