2019 was a record year for the Traditional Balsamic Vinegar of Modena. A deserved result for this unique product in the world. So unique that its registration in the UNESCO cultural heritage register has been requested. A result that sanction the originality of this excellent product.
The annual Assembly of members of the Consortium for the Protection of Traditional Balsamic of Modena was held a few days ago. President Enrico Corsini during the conference confirmed the result obtained: 2019 more than 100.000 bottles of Traditional were produced. The best result since the 2008 economic crisis.
But let’s not be fooled by the numbers, the 100.000 bottles that correspond to 10.000 litres of product, are a very small crumb when compared to the millions of litres of Balsamic Vinegar of Modena PGI that are placed on the market.
This immense quantitative difference shows how limited is the production of the Traditional and how the quality is high. The Balsamic Vinegar of Modena PGI can only be put on sale after 60 days from its production, while Traditional Balsamic Vinegar PDO must wait for 1 or 25 years to be bottled.
Traditional Balsamic Vinegar of Modena 2019 is a record
During the meeting, President Corsini recalled and illustrated the numerous actions promoted by the Consortium to protect and disseminate the product knowledge. He also reaffirmed the satisfaction for the collaboration that has been taking place for some months with the Balsamic Vinegar of Modena PGI Consortium and welcomed three new producer members.
We take this opportunity to remind you what are the main differences between the PGI and PDO product
Balsamic Vinegar of Modena PGI
Ingredients: cooked must, wine vinegar, caramel max 2%
Legal ageing: minimum of 60 days
Containers: bottles of various shapes in glass or plastic, ceramic, wood; different sizes 250 ml, 500 ml, 750 ml, 1l, 2l, 5l.
Use in the kitchen: it can be used raw as a final dressing for the dish and put in a pan while cooking food.
Traditional Balsamic Vinegar of Modena PDO
Ingredients: 100% cooked must
Legal ageing: 12 or 25 years
Container: 100 ml
Use in the kitchen: always use only raw. DO NOT put in a pan on the flame.
