This plate is nourishing, tasty and fresh. It is ideal during hot summer days, but not only during the warm season. You can prepare it at any time of the year using seasonal vegetables.

Ingredients for 4 people:
- 4 salmon fillets
- some salad (in this recipe we use “Crescione”)
- Extra Virgin Olive Oil
- Traditional Balsamic Vinegar of Modena PDO
- 1 small red onion (better the Tropea one)
- 10 cherry tomatoes
- 1 lemon
- some salt
Preparation:
Leave the salmon fillets resting for half an hour in a pan with some coarse salt and lemon juice.
Turn on them a few times to marinate on both sides. At this point cook the salmon fillets in a hot pan with a spoon of Extra Virgin Olive Oil for a couple of minutes per side.
In the meantime, wash the salad. Finely cut the onion into small strips e cut the tomatoes in two parts.
Once everything is ready, you can serve the salmon and the vegetables together and season them with some EVO oil and salt.
