Guinea fowl salad with Balsamic Vinegar

Today’s recipe is a super tasty second course which is perfect for the cold season which is about to start: guinea fowl salad with Balsamic Vinegar! This dish is perfect to integrate all nutrients and represents a valid alternative to the totally green salad! Keep on reading to discover all the ingredients!

Ingredients for 4 people:

  • 1/2 guinea fowl (raised on the ground)
  • Extra virgin olive oil
  • 4 nuts of butter
  • 4 sage leaves
  • 2 rosemary sprigs
  • 80g of candied fruit (cedar and orange)
  • 20g of dried raisins
  • 8 datterini tomatoes
  • salad to taste
  • salt to taste
  • pepper to taste

Step 1: place the half guinea fowl in a baking pan with the butter, the sage, the rosemary, a little bit of extra virgin olive oil, salt and pepper to taste. The Bake at 160 ° C for 60 minutes, covering with tinfoil.

Step 2: After the cooking, remove the bones from the guinea fowl and cut it into small pieces. At this point place the salad in a bowl and then add the candied fruits cut into small cubes and the raisins. Then chop the datterini tomatoes and add them to the bowl.

Step 3: At this point add everything to the guinea fowl and finally season with salt, pepper, extra virgin olive oil and Traditional Balsamic Vinegar of Modena. Serve straight away!
