L-O’s Zucchini cream with traditional Balsamic Vinegar is an extremely healthy dish which is perfect for the upcoming month. Rich in fibers and vitamins it will become one of your favorite winter dishes!
Ingredients
- 400 grams of zucchini
- 1 fennel heart
- 1 big carrot
- 2 celery stalks
- 1/2 gold onion
- 150 grams of potatoes
- 6 small tomatoes
- 200 grams of shrimp tails
- 6 medium mullets fillets
- Traditional Balsamic Vinegar of Modena
- Extra virgin olive oil
- Stale bread
- White wine
- Salt and pepper to taste
Procedure
Let’s start by washing and cutting the onion, the celery and the carrot into pieces. Then stew everything with a little bit of oil and salt. At this point add the zucchini and the diced potatoes, the fennel previously cut into small pieces and allow them to brown gently for a few minutes.
Now cover the vegetables with three quarters of a liter of water, bring to a boil and allow to simmer for about 50 minutes. In the meantime, slice the bread into some little cubes and toast them quickly in the pan without any seasoning.
At this pint peel the tomatoes, remove the seeds, reduce them to fillets and place them in a bowl with a little bit of oil, salt and Original Balsamic Vinegar of Modena. Then sauté the shrimp tails and the red mullet fillets in a pan with a tablespoon of oil, blend with a little white wine, add salt and set aside.
Now it’s time to mix the cooked vegetables with the help of a mixer and cook them directly in the saucepan, adding a spoon of chopped parsley.
Whisk for a long time until you obtain smooth and homogeneous mixture. Finally season with salt and pepper to taste and enjoy the dish!
