Sea Bream Fillets with Balsamic

Ingredients

Ingredients for four people:

  • 4 sea bream (800 gr per piece)
  • 2 lobster (500 gr per piece)
  • 100 gr of celery
  • 100 gr of onion
  • 20 gr of garlic
  • 200 gr of cherry tomatoes
  • one glass of white dry wine
  • 1 bay leaf
  • 2 spoons of Traditional Balsamic Vinegar of Modena
  • parsley
  • fish soup
  • Extra Virgin Olive Oil
  • flour
  • sweet and sour onions
  • stewed potatoes
  • salt and pepper

Preparation

First of all scale and wash all the 4 sea bream. Start filleting sea bream on the backside and let drain in a colander.

At the same time, prepare chopped celery, onion, garlic, parsley, bay leaf. Then brown the ingredients with a little Extra Virgin Olive Oil. Now add the lobster fillets with the dry white wine. Let them evaporate and add the cherry tomatoes and a ladle of fish broth.

For the preparation of the fish soup use the remains of sea bream and lobster. If you want you can add some nut of fish broth.

Cover with a lid and cook for 20 minutes. Once this is done, remove the lobster and let it cool. To the remaining sauce add a little flour or starch and reduce it by about half. Put it in a colander and set it aside for the final phase.

Take the sea bream, lightly flour them, brown with a little butter. Then add some white wine, Traditional Balsamic Vinegar of Modena and the lobster sauce. Cook it for 8 minutes.

In conclusion, add some salt and pepper. Put the sea bream fillets on a serving plate with a lobster claw and the slices cut into rings and its sauce. Then sprinkle lightly with the chopped parsley and serve with the sweet and sour onions and the stewed potatoes.
